The cashew tree is a tropical evergreen tree that produces the cashew seed and the cashew apple accessory fruit. The tree can grow as high as 14 m, but the dwarf cultivars, growing up to 6 m, prove more profitable, with earlier maturity and greater yields.


A single serving of cashew nuts is 1 ounce—or about 18 nuts. 2 One serving contains 157 calories and just under 9 grams of carbohydrate. Most of the carbohydrate in cashews is starch. A small amount is fiber (just under 1 gram) and the rest (about 1.7 grams) is sugar.


Cashew harvesting can take place about two months after the fruit has set, when the apple takes on a pink or red cast and the nut turns gray. Alternatively, you can wait until the fruit falls to the ground, when you know it's ripe. After harvesting, twist the nuts off of the apples by hand.


When cashews are bought in bulk and stored properly, they can last for about a month at room temperature or up to 6 months in the refrigerator. Beyond that, freezing would be necessary. Most pre-packaged cashews will have a best-by date, which will tell you how long you can leave the package unopened in your pantry.


Most nuts all have low GI scores, between 0 and 20. The nut with a higher GI score is the cashew (22).
